Make this tomato sauce with pasta or for our Pita Pizza recipe. It has a lot less sodium than jarred sauce and has extra vitamins and minerals.
What you'll need
Measuring spoons
Sharp knife
Cutting board
Microwave-safe dish (like glass or ceramic)
Microwave
Spatula or spoon
Ingredients
1 Onion small, finely chopped
1 Carrot small, finely chopped
1 stalk Celery finely chopped
2 Mushrooms medium, trimmed, thinly sliced
35 ounces Tomato Sauce canned, low-sodium
1/2 teaspoon Oregano dried
1 tablespoon Lemon Juice fresh, optional
Directions
1.Combine olive oil and 2 of the garlic cloves in the center of a 2½ quart microwave safe dish. Cook uncovered for 2 minutes at 100% power. Add onion, carrot, celery and mushrooms, and cook uncovered for 5 minutes.
2.Stir in tomatoes and their liquid, oregano, basil and remaining garlic cloves. Cook uncovered for 15 minutes, stirring twice. Remove from oven and let stand for 5 minutes.

- Time varies depending on strength of microwave. Cook only in ceramic or glass.
