What you'll need

Measuring spoons
Vegetable peeler
Cutting board
Sharp knife
Large skillet
Spatula or spoon

Ingredients

Serves 3
2 tablespoons Olive Oil
1 clove Garlic minced
1 pound Vegetables
of Seasoning dried, of your choice
of Salt to taste
of Black Pepper to taste

Directions

1.Wash and/or peel the veggies as needed and cut into ½-inch pieces or ½-inch slices.
2.In a medium sauté pan, heat oil with garlic. Add the vegetables and cook for about 1 minute. If using a variety of vegetables, add the firmer vegetables to the pan first and cook for a few minutes before adding the faster cooking vegetables.
3.Add the dried seasonings. Cover and cook for 3-5 more minutes, or until the vegetables are tender.
4.Sprinkle with salt and pepper to taste.

Chef's Tips

  • Letting the vegetable brown slightly makes them extra flavorful.
