Serve this delicious mash with your favorite vegetables or meat.

What you'll need

Measuring cups
Measuring spoons
Pot
Stovetop
Spatula or spoon

Ingredients

Serves 8
4 cups Water
1 teaspoon Salt
1 cup Whole Grain Blue Cornmeal or 1 cup Grits
1 cup Corn fresh or frozen kernels

Directions

1.Combine water and salt in a pot. Bring to a boil.
2.While stirring, slowly sprinkle in cornmeal. Reduce heat to low, cover and simmer 20 minutes. Stir occasionally.
3.Stir in corn kernels. Cover and simmer until cornmeal is tender and all water is absorbed, about 10 minutes more.

Chef's Tips

  • For another serving option, press the cooked mash into a lightly oiled baking dish and let cool completely. Cut into squares and serve at room temperature or reheat over a grill.
  • Variations: Try adding different ingredients for extra flavor, like scallions, minced jalapeños, ground cumin, or garlic powder.
