Curried Waldorf Salad

What you'll need

Whisk or fork
Zester
Sharp knife
Cutting board
Measuring cups
Measuring spoons
Spatula or spoon
Large bowl

Ingredients

Serves 6
1/4 cup Yogurt Nonfat plain
3 tablespoons Mayonnaise light
1/2 teaspoon Curry Powder
1/8 teaspoon Salt
of Cayenne Pepper to taste
1 Orange
2 Red Apples Tart-sweet and diced
1 cup Celery chopped
1/3 cup Golden Raisins
1/3 cup Walnuts toasted and coarsely chopped

Directions

1.

Whisk yogurt, mayo, and spices together in a large bowl.

2.Grate 2 teaspoons of zest from orange and add to dressing.
3.

Using a sharp knife, cut off peel and pith from orange. Slice into segments and mix with dressing.

4.Add apples, celery, nuts and raisins. Toss to combine.
