Beef Stew with Okra
A hearty and healthy stew.
(about 10 ounces), cut into 1-inch cubes

fresh, ends trimmed, rinsed, and cut into 1⁄2-inch thick slices or 1 pound frozen okra
(feel free to use less)
equivalent to 12-ounce bags frozen, or fresh
What You'll Need

- Cutting board
- Measuring spoons
- Measuring cups

In a pot, heat vegetable oil over medium-high heat. Add stew meat and sprinkle with Soulful Seasoning. Stir in onion and garlic, then cook until meat browns, about 5 to 7 minutes.
Add tomato puree and water, then bring to a boil on high heat. Add okra and potatoes. Mix in salt and black pepper.
Lower heat to simmer and allow soup to cook for about 1 hour, stirring every 15 minutes.
Add in spinach and cook until heated through, about 2 minutes.
Spoon into bowls and serve hot.
