A warming winter melon chicken soup with mushrooms and asparagus.

Ingredients

Serves 4
1 Winter Melon large, seeded and chopped
2 cups Chicken Broth low-sodium
4 Black Mushrooms dried and then rehydrated
2 teaspoons Ginger Root grated
1 1/2 cups Chicken cooked and shredded
1 cup Asparagus tips only
Salt to taste

Directions

1.

Place melon in pot of boiling water; simmer 20-30 minutes until tender. Drain.

2.

Add remaining ingredients; simmer additional 5 minutes.
