Directions

  1. Preheat oven to 375 degrees.
  2. Mash bananas in a bowl with fork.
  3. Mix in pumpkin purée.
  4. Mix in vanilla and spices.
  5. Add oats and combine until dough forms.
  6. Fold in coconut.
  7. Spoon dough onto a baking sheet lined with parchment paper. (Makes about 16 cookies). Bake for ~20 minutes.
  8. Take out of the oven and let cool for 10 minutes.
  9. Remove cookies with a spatula. Enjoy!
