Eating food containing raw unpasteurized eggs may be harmful and can cause you to get sick from foodborne illness. People who are at an especially high risk include children, older adults, pregnant people, and those with compromised immune systems due to conditions like HIV or cancer.
According to the USDA, egg mixtures are safe to eat if heated to at least 160°F.1 If a recipe doesn’t call for the eggs to be heated, USDA recommends choosing eggs labeled as “pasteurized”, which means they have been heated to kill bacteria often present in eggs, such as Salmonella.
