Okra is a common summer vegetable in Iraq. This dish is often eaten over rice for breakfast.

Ingredients

What You'll Need

  • Measuring cup
  • Measuring spoons
  • Cutting board
  • Chef knife
  • Medium saucepan

Directions

  1. In a medium saucepan, sauté the garlic in oil over medium heat until starting to soften. Be careful not to burn the garlic.
  2. Add the tomato sauce and bring to a boil. Add the okra and 2 cups of water and bring to a boil.
  3. Reduce heat and simmer uncovered for 20 minutes.
  4. Season with salt and add lemon juice. Simmer for 10 more minutes.
  5. Serve as a soup or poured over brown rice.
