Iraqi Tomato Soup with Okra

Okra is a common summer vegetable in Iraq. This dish is often eaten over rice for breakfast.

What you'll need

Measuring spoons
Measuring cups
Spatula or spoon
Serving bowls
Medium saucepan
Sharp knife
Cutting board
Stovetop

Ingredients

Serves 4
4 cloves Garlic sliced
2 teaspoons Olive Oil
1 cup Tomato Sauce low-sodium
1 pound Okra fresh or frozen, whole
1 teaspoon Salt
3 tablespoons Lemon Juice 1 whole lemon

Directions

1.In a medium saucepan, sauté the garlic in oil over medium heat until starting to soften. Be careful not to burn the garlic.
2.Add the tomato sauce and bring to a boil. Add the okra and 2 cups of water and bring to a boil.
3.Reduce heat and simmer uncovered for 20 minutes.
4.Season with salt and add lemon juice. Simmer for 10 more minutes.
5.Serve as a soup or poured over brown rice.
