Spinach and Cilantro Salad

Adding cilantro to this salad gives it a unique flavor that you'll love.

What you'll need

Large bowl
Measuring cups
Measuring spoons
Cutting board
Sharp knife
Spatula or spoon

Ingredients

Serves 6
16 ounces Spinach washed, stems discarded
4 cups Tomatoes about 4 medium, chopped
1/2 cup Onion slice thinly and cut into quarters
2 cups Fresh Cilantro cut and discard bottom 2 inches of stems, chopped
1 1/2 tablespoons Olive Oil
1/2 Lemon
1/2 Lime
2 cups Cotija Cheese or of Feta Cheese crumbled
1 cup Tortilla Chips lightly crushed

Directions

1.Put all vegetable ingredients in a large bowl.
2.Squeeze the juice of the lemon and lime into the bowl.
3.Drizzle with oil.
4.Sprinkle cheese over salad.
5.Toss salad until all vegetables are well coated with the dressing.
6.Just before serving, top with lightly crushed tortilla chips (will keep them from becoming soggy).
