Citrus Vegetables

Liven up your veggies with a little lime juice.

What you'll need

Measuring cups
Measuring spoons
Can opener
Stovetop
Large pot
Small bowl
Spatula or spoon

Ingredients

Serves 4
3 tablespoons Water
2 cups Zucchini cubed
2 cups Corn fresh, canned, or frozen, cooked
1/4 teaspoon Salt
1 tablespoon Fresh Lime Juice
1/2 teaspoon Olive Oil
1/4 Fresh Oregano

Directions

1.In a pot, over medium heat: add water and vegetables, let cook for a few minutes until vegetables are tender but crisp.
2.Remove from heat and set aside.
3.In a small bowl: mix lime juice, olive oil, oregano and salt.
4.Pour over steamed vegetables to coat evenly.
5.Serve warm.
