Cabbage with Carrots
A quick and delicious side dish from Somalia that adds pretty color to your plate!
minced, or ground dried ginger
seeds removed and finely chopped
cored and thinly sliced (about 5 cups)
thinly sliced (about 1.5 cups)
What You'll Need

- Cutting board
- Measuring spoons
- Measuring cup
- Large pot with lid
- Wooden spoon
In a large pot, heat oil over medium. Add mustard seeds. Cook until they start to pop a bit, but make sure not to burn them, about 30 seconds.
Add onion and cook until soft, 3 to 5 minutes.
Stir in ginger, chile, and turmeric. Cook for 1 minute.
Add cabbage, carrots, and salt. Mix well. Cover the pot and cook to desired doneness, 10 to 15 minutes. Stir a few times and scrape spices from the bottom of the pot to avoid burning them.
