A quick and delicious side dish from Somalia that adds pretty color to your plate!

Ingredients

thinly sliced

minced, or ground dried ginger

seeds removed and finely chopped

cored and thinly sliced (about 5 cups)

thinly sliced (about 1.5 cups)

  • Chef knife
  • Cutting board
  • Measuring spoons
  • Measuring cup
  • Large pot with lid
  • Wooden spoon

Directions

  1. In a large pot, heat oil over medium. Add mustard seeds. Cook until they start to pop a bit, but make sure not to burn them, about 30 seconds.
  2. Add onion and cook until soft, 3 to 5 minutes.
  3. Stir in ginger, chile, and turmeric. Cook for 1 minute.
  4. Add cabbage, carrots, and salt. Mix well. Cover the pot and cook to desired doneness, 10 to 15 minutes. Stir a few times and scrape spices from the bottom of the pot to avoid burning them.
