Swahili Tomato Salad

This simple tomato salad is delicious and refreshing.

What you'll need

Sharp knife
Cutting board
Measuring cups
Measuring spoons
Large bowl
Whisk or fork
Spoon

Ingredients

Serves 6
2 Limes juiced
2 tablespoons Vegetable Oil
1/4 cup Parsley finely chopped
1 Green Chili Peppers seeds removed and chopped
1/2 teaspoon Salt
5 Tomatoes diced
4 Green Onions thinly sliced

Directions

1.In a large bowl, combine lime juice, oil, parsley, chile, and salt.
2.Add tomatoes and green onions. Stir to mix well.
3.Chill in the refrigerator for 30 minutes.

Chef's Tips

  • For extra flavor, combine 2 tablespoons peanut butter with the oil before adding to the tomatoes.
