In a small bowl, combine oil, orange juice, rice vinegar and salt for the dressing.
In a large bowl, combine spinach, persimmons, nuts and cranberries. Toss salad with dressing and serve.
Persimmons are only available in the wintertime, but this salad can be adapted for other seasons as well. Instead of persimmons, try adding mandarin oranges and avocado, or in the summertime, substitute different types of fresh berries for the persimmons and dried cranberries.
