Cold but spicy food is refreshing and delicious in the summer. The ingredients listed below taste great together, but this dish can be made with whatever vegetables or sauce you have on hand.
(or any Asian noodles, like soba)
What You'll Need
- Medium-sized pot
- Measuring spoons
- Cutting board
- Chef knife
- Mixing Bowl
- Fork or tongs
Prepare the noodles according to the package instructions. Rinse them under cold water and put them in a colander to drain.
Put the noodles in a bowl and add the soy sauce, sesame oil, chili sauce, scallions, cucumber, carrot, and cabbage. Mix it all together with a fork or a tongs. Taste it and add salt and pepper as needed.
Let the noodles sit in the fridge for about an hour if you can. The flavors will mingle and become more intense. Top the noodles with hard-boiled eggs and serve.
