Mexican Fiesta Rice

Spice up your rice with a few ingredients for a lot of flavor!

What you'll need

Large pan with lid

Ingredients

Serves 5
1 pound Ground Beef (or 2 cups cooked beans) or of Turkey or of Chicken
1/2 Onion chopped
1 Bell Pepper chopped
15 ounces Corn drained, OR 2 cups frozen corn
15 ounces Diced Tomatoes
2 tablespoons Chili Powder
1 cup Brown Rice quick-cook, dry
1 Beef Bouillon
2 cups Water

Directions

Step 1 picture
Cook ground meat, onion, and bell pepper in a large pan over medium heat until meat is browned. Drain fat from pan.

Add corn, tomatoes, chili powder, uncooked rice, bouillon cube, and water. Cover and simmer for 30 minutes. Refrigerate leftovers.
