What a great substitute for the portobello pizza! Eggplants are a good source of vitamin C which helps build up your immune system and vitamin K which can help you heal your body. Eggplants can be a tad bitter for some people. The easiest way to take away some of that bitterness is to salt the cut eggplant. Let it sit for about 30 minutes then rinse the eggplant under cold water to get rid most of the salt. This will absorb some of the water in the eggplant. You don't have to go through this step if you don't want to but it is another way to cook your eggplant.
